How to Choose Jams and Concentrated Juices for Milk Tea: Reading the Real Fruit Content

First, understand what you are actually buying
Many people lump jam, concentrated juice, juice drink and fruit-flavored drink together — they are four completely different things.
Jam: fruit cooked with sugar; contains fruit pulp and pieces; thick. National standard GB/T 22474-2008 requires fruit content of no less than 25% (measured as soluble solids). But some so-called jams on the market have under 10% fruit — the rest is sugar and thickeners.
Concentrated juice: fruit juice with most water evaporated — volume shrinks to 1/6 to 1/8 of the original, and sugar content (Brix) can reach 60-70. You dilute it with water when using. This is the workhorse ingredient for fruit teas.
Juice drink: can be called a juice drink at ≥10% juice content. Note how low that bar is — 10% juice plus 90% water, sugar and flavoring, and the package can still print a big "juice" label.
Fruit-flavored drink: juice content can be near zero. Fruit flavor comes entirely from flavoring, color from pigment. A lot of the "fruit teas" you drink are made with this.
These four things differ in price by several times. The most expensive — concentrated juice — runs about 400-800 yuan per 25kg commercial bucket, depending on the fruit. Fruit-flavored drink is cheapest, possibly under 100 yuan for the same weight. Why can some shops sell a fruit tea at 8 yuan and still profit? Think about what they use.
How to read juice content: three places to look
Ingredient list — the most reliable method. National standards require ingredients to be listed by content, highest first.
If a jar of jam lists white sugar first, water second, and concentrated strawberry juice third, the main ingredients are sugar water and strawberry is just a supporting role. If strawberry (or concentrated strawberry juice) comes first and sugar second, the fruit content is at least decent.
Words you must recognize: Concentrated XX juice — the real thing, juice concentrated by evaporation; XX juice — acceptable, but check the labeled content; XX pulp/puree — contains fruit flesh, pricier than plain juice; food flavoring / XX flavor — seasoning, does not count as juice content; fruit-flavored syrup — pure syrup plus flavoring, juice content basically zero.
A jar of strawberry jam whose ingredient list is just "white sugar, water, glucose syrup, strawberry flavoring, Ponceau 4R" — not a single strawberry — should strictly be called "strawberry-flavored syrup".
Nutrition label — look at two numbers: carbohydrates and sodium.
High-juice products get their carbohydrates mainly from the fruit's own sugar, usually 40-60g/100g (concentrated juice can exceed 70). If carbohydrates are very high but juice ranks far down the ingredient list, most carbs come from added sugar, not fruit.
Sodium is a metric most people ignore, but natural fruit juice is very low in sodium (usually under 5mg/100g). If sodium is suddenly high, salt or sodium-containing preservatives may have been added — generally a sign of lower quality.
Labeled juice content — GB/T 31121-2014 sets clear requirements for different types of juice drinks: pure fruit juice (100%) ≥100%... wait, effectively 100%; fruit/vegetable juice drink ≥10%; fruit pulp drink ≥20%; concentrated fruit/vegetable juice must state the concentration factor; fruit-flavored drink has no mandatory requirement (can be near 0).
The problem: many commercial jams and concentrated juices do not label juice content at all, or print something vague like "greater than 15%". For those, either demand a test report from the factory or do not buy them at all.
Reputable manufacturers state clearly on the product spec sheet: juice content, Brix value, origin, and process used. Salespeople will not show you this unless you ask.
Brix value: the ID card of concentrated juice
Brix is sugar content — 1 Brix = 1% soluble solids in solution. It is the most direct indicator of concentrated juice quality.
Standard Brix ranges differ by fruit: concentrated apple juice 60-70 (most common and cheapest); concentrated orange juice 60-66 (big domestic vs import price gap); concentrated mango juice 30-45 (mango itself is not very sweet, so concentrate stays low); concentrated strawberry juice 40-55 (strawberries are watery, hard to concentrate); concentrated passion fruit juice 35-50 (with seeds costs more than without).
A Brix below the range means either under-concentration (too much water — you paid for water) or cheaper juice blended in.
I once met a supplier offering concentrated mango juice at Brix 28, cheap. A check showed they had blended in a lot of concentrated apple juice — mango juice costs 3-4 times more than apple. This is not rare in the industry.
When buying concentrated juice, ask the supplier for the Brix reading per batch and compare it with your spec sheet. A deviation over 2 Brix points means a problem.
Color: do not be fooled
Natural juice colors are actually not that vivid. Concentrated strawberry juice is dark red, leaning brown. Mango juice is a dull orange-yellow. Passion fruit juice leans yellow-brown. That fluorescent pink or bright yellow you see in milk tea shops is very likely added pigment.
Legal pigments fall into two classes: natural (beet red, gardenia yellow, beta-carotene, etc.) — no safety concern; synthetic (Ponceau 4R, Sunset Yellow, Tartrazine, etc.) — permitted by national standards but with strict limits.
Legal use is fine. But if a jam's color is abnormally vivid, far from the fruit's natural color, it is basically pigment — not unusable, but it tells you the product is low in fruit content and needs pigment to compensate.
The test is simple: compare with pure juice. Squeeze a cup of strawberry juice at home, look at its color, then look at what your jam makes. If the gap is huge, there is a problem.
Cold-pressed, from-concentrate, or fruit-flavored blend?
The tea circle loves talking about "cold-pressed fresh juice" and "NFC". Let me be practical.
Cold-pressed: low-temperature pressing, no heating, maximum flavor and nutrition retention. Best quality, but also the most expensive, with short shelf life (7-14 days in cold chain). Most commercial shops cannot afford it unless you run premium fresh-fruit tea.
From concentrate: concentrate first, transport, then dilute back with water at destination. This is the commercial workhorse. Do not assume "reconstituted" is bad — reputable manufacturers produce very stable from-concentrate juice, and the concentrating process sterilizes thoroughly, making food safety better than fresh-pressed.
Fruit-flavored blend: juice + water + sugar + flavoring + pigment, mixed to formula. Most mid-to-low-end fruit teas use this. Low cost, stable taste, but juice content is usually only 10-20%.
My advice: if your price point is under 10 yuan, from-concentrate offers the best value. For fruit teas above 20 yuan, consider cold-pressed plus NFC for a few signature items. Avoid fruit-flavored blends where possible; if you must use them, label them clearly — do not let customers think they are drinking real juice.
Commercial procurement: how I choose suppliers
In 16 years I have changed suppliers at least twenty times. For jams and concentrated juices, these are my rules.
First, there must be a test report. Not fancy certificate copies — a quality test report that travels with every batch: juice content, Brix, microbiology, heavy metals, pesticide residues — the basics. No report, no discussion, no matter how cheap.
I have been burned. A supplier once claimed 80% juice content in concentrated mango juice; third-party testing showed 55%. That missing 25% is pure lost money. I learned: no matter how good a supplier talks, without a report I do not buy.
Second, when sampling, do not only taste. Smell it: natural fruit aroma is muted, not a sweet fragrance that hits your nose instantly. If the lid opens to an intense fruit smell, flavoring is likely added. Dab a bit on the back of your hand: natural juice dries darker with fine pulp particles; juice with thickeners and pigment dries uniformly bright and feels slippery.
Third, compare total cost, not unit price. Some jams are cheap per kilo but low in juice content — you need 30-50% more to hit the same flavor, which works out more expensive. Simple math: per-cup jam cost = unit price (yuan/kg) × per-cup usage (g) / 1000. Calculate this and compare across similar products — only then is it fair.
Common traps
Fruit-flavored syrup sold as jam. The package says "strawberry jam" in big letters; the ingredient list has zero strawberries — all syrup and flavoring. These are everywhere on 1688 at half the price of real jam. How to tell: is the first ingredient fruit or concentrated juice? If not, it is syrup.
Inflated juice content. Labeled "over 50% juice", measured at maybe 30%. Consumers cannot test this themselves — it depends on the manufacturer's conscience and third-party reports. Commercial buyers must demand third-party testing.
Concentrated juice blended with cheaper varieties. Mango juice blended with apple is the most common, because apple juice is cheap. Blueberry juice blended with grape also happens. The ingredient list will not tell you this — it does not declare what was blended in. Only third-party testing or your own palate catches it. Different juices have different sugar-acid ratios and flavor profiles; once you drink enough, you can tell.
Excess pigment. Some low-end products over-dose pigment to look good. This frequently fails random inspections. Test reports usually include a pigment limit item — check it.
Shelf-life and storage tricks. Opened concentrated juice ferments and spoils quickly at room temperature. Some suppliers say "store at room temperature" — ask exactly: room temperature unopened, or also after opening? Most concentrated juice needs refrigeration after opening and must be used within 7 days. This is on the spec sheet, not just sales talk.
Final words
This category is deeper than tea. Tea at least has origin and altitude as reference; with juice, even "does it contain fruit" is a question.
But at the end of the day it is not that complicated. Remember three things: read the ingredient list to confirm real fruit, demand test reports to confirm the data, and taste a sample to confirm the flavor. A supplier who can do all three is worth trying, big brand or small. One who cannot — stay away even if their ads are everywhere.
